An affogato is a deceptively simple Italian dessert made by pouring a shot of hot espresso over a scoop of vanilla gelato or ice cream. The hot coffee melts the gelato slightly, creating a mix of warm and cold, bitter and sweet, that comes together in a cup or small glass. It is part dessert, part coffee, and entirely satisfying.

Why it matters for your restaurant

The affogato is one of the most profitable dessert items you can offer because the ingredients are minimal and the preparation takes less than a minute. How it works in practice

The execution could not be more straightforward. Place one generous scoop of vanilla gelato or high-quality vanilla ice cream in a small bowl or glass. Some restaurants offer variations to create upsell opportunities. A splash of amaretto, Frangelico, or Kahlua turns it into a boozy affogato that you can price $3 to $4 higher. A drizzle of salted caramel sauce or a biscotti on the side adds perceived value for very little additional cost. The key to a great affogato is timing. It needs to reach the table quickly after the espresso is poured, before the gelato melts completely. Coach your servers to pick it up immediately and deliver it while the contrast between hot and cold is still intact.
