Osso Buco
Osso buco (meaning "bone with a hole" in Italian) is a traditional Milanese dish of cross-cut veal shanks braised slowly with vegetables, white wine, and broth until the meat is fall-off-the-bone tender. The marrow inside the bone is considered the best part, adding richness to every bite.
Why it matters for your restaurant
Osso buco is the kind of dish that turns a regular dinner into an occasion. It feels luxurious and special to guests, which supports a premium price point on your menu. Because it is braised low and slow, most of the work happens during prep rather than during service, freeing up your line cooks to focus on dishes that need last-minute attention.
Veal shanks are not the most expensive cut of meat, but the finished dish carries a perception of high value. You might spend $8 to $10 on the protein per portion, and with the vegetables, wine, and stock factored in, your total plate cost lands around $12 to $14. Pricing it at $34 to $42 is reasonable for most markets, giving you a healthy margin on a dish that guests feel great about ordering.
How it works in practice
Your kitchen preps osso buco by seasoning and searing the veal shanks until golden on both sides, then building a braising liquid with diced onions, carrots, celery, garlic, crushed tomatoes, white wine, and veal or chicken stock. Everything goes into a covered pan and braises in the oven at around 325 degrees for two to two and a half hours until the meat is tender and pulling away from the bone.
The traditional finish is gremolata, a bright mixture of lemon zest, garlic, and parsley that gets sprinkled over the top just before serving. That hit of freshness cuts through the richness of the braise and wakes up the whole plate. Serve it over risotto Milanese or creamy polenta, and you have a complete dish that looks stunning and tastes even better.
Because the braise can be done ahead of time and reheated gently during service, osso buco is an excellent special for busy nights. Prep it in the morning, portion it out, and finish each plate to order in just a few minutes.
Connecting the dots
Osso buco is a signature-quality dish that does not demand much from your kitchen during the dinner rush. It pairs naturally with risotto, giving you an opportunity to upsell a complete Italian experience. Featuring it as a weekend special or a seasonal menu item creates anticipation among your regulars and gives your team a showpiece to be proud of.
