RevPASH
RevPASH stands for Revenue Per Available Seat Hour. It measures how much revenue each seat in your restaurant generates for every hour it is available during service. You calculate it by dividing your total revenue by the product of your total seats and the number of hours you are open.
Why it matters for your restaurant
RevPASH is one of the most revealing metrics in the restaurant business because it accounts for three things at once: how many guests you are serving, how much they are spending, and how efficiently you are using your time and space. Two restaurants can have the same total revenue but very different RevPASH numbers, and the one with the higher RevPASH is running a more efficient operation.
This metric helps you identify when your restaurant is underperforming relative to its potential. You might feel like Saturday nights are great, but if your RevPASH drops sharply between 5:00 and 6:30 because early tables linger and late reservations have not arrived yet, there is an opportunity to improve. RevPASH makes those gaps visible.
How it works in practice
Suppose your restaurant has 80 seats and is open for dinner from 5:00 to 10:00, giving you five hours of service. Your total available seat hours for the evening are 80 multiplied by 5, which equals 400. If you generate $6,000 in revenue that night, your RevPASH is $15.
Now break that down by hour. From 5:00 to 6:00 you might generate $600 (RevPASH of $7.50). From 7:00 to 8:00 you generate $2,000 (RevPASH of $25). That difference tells you exactly when your dining room is working hardest and when it has room to grow.
With this data, you can take targeted action. Maybe you offer an early-bird prix fixe to boost that 5:00 to 6:00 window. Maybe you adjust your reservation spacing to ensure tables turn more smoothly during peak hours. Or maybe you realize that staying open until 10:00 only generates $300 in that last hour and it is not worth the labor cost.
